Puliyodharai


Half glass (small) of Dhania seeds

Chana dal and Udad dal less than Dhania seeds

Pepper 1 tea spoon

Red chilli 6-7

Roast these 5 items separately - not a lot, just a bit.  Grind it all together. 

Tamarind - size of a lemon + a little more. In hot water, nicely squeeze the tamarind.

Mustard, udad dal, chana dal, sesame oil, very little methi, curry leaves - put in oil like tadka. Add the tamarind water. Add a bit of turmeric. Add hing as well. Add the powder above once the raw tamarind smell is gone. This is the last step because all the powders above are already roasted.

Note:  The note in the pic above is for a powder form - where instead of liquid tamarind, you can use tamarind dry and grind it all as a powder.

If you want to add extra groundnut - roast it separately and keep and add it when fully done. 

Neyyappam

 


Raw rice 1 measure

Jaggery 1 and 1/4 measure

Soak rice for 5-6 hours. Drain water fully. Grind with jaggery. (Jaggery releases water, so no need to add more water). Add half a banana (yellaki) or a quarter (nendran). Latter is better. 

Ferment overnight.

Add elaichi before frying. 

Fry in 50% oil and 50% ghee.
